The way that memory manufacturers have been able to make CF and SD cards have such high capacity is by stacking silicon layers on top of each other. The increase in thickness is minute, there's no increase in board real estate and every time you do it, you double capacity. The problem with moving this technology to other areas, like CPUs is heat.
